Smoothies!!!

This photo is a yummy smoothie I recently tried and LOVED!!!...sounds weird but is really good.
Carrot-Pineapple Smoothie
3/4 c chopped fresh pineapple
1/2 c ice
1/3 c orange juice (the recipe calls for fresh but I just used what I had in the frig)
1/4c chopped carrots
1/2 of a banana (freeze the other 1/2 for another time)
Blend until smooth and frothy!!

Another one of my favorites is PB and Banana
1/2 of a Banana
Tbs of Peanut Butter
1/2c or so of milk
1/2 of ice
sometimes a little squirt of hershey's syrup
Blend until smooth...MMMMMM!!!

BBQ Pulled Pork and Ranch Mashed Potatoes (Rachael Ray's)

This was our dinner one day last week.  The photo isn't great BUT the meal was!!!  My family thought I was nuts taking a picture of my dinner plate!!  The dinner was a BBQ pulled pork sandwich, ranch mashed potatoes (Rachael Ray's potatoes) and carrots.
The pork you put in the crock pot in the morning with a bottle of BBQ sause and set it to low for the day.  Before you are ready to serve the pork, shred it with 2 forks in the crock pot.  I like my roll toasted (toast before you fill the roll).  This sandwich is also really yummy with pineapple on top!!!  (I just happened to forget it at the store!)

The Ranch Mashed Potatoes are Rachael Ray's recipe.
Peel, cube and boil 2 pounds of Idaho potatoes.  Mash the potatoes with 2/3c buttermilk, salt and pepper, a few dashes of hot sause, handful of fresh flat-leaf parsley, chopped (I used dried), handful fresh dill chopped, and handful of fresh chives, chopped.
These are really good!!!

The carrots I just put in a pan with some olive oil, salt and pepper.

This dinner smelled great all day cooking in the crock pot!!  Hope you try and enjoy it too!!

Salad with Fruit

This salad was my lunch the other day and it was YUMMY!!!

Some bagged salad
Some baby spinach
A piece of sliced turkey rolled up and cut into pieces
Sliced strawberries
Sliced grapes
Sweet and Sour poppyseed dressing (yum)
Some almonds sprinkled on top would be good too!!

Clean Eating

Healthy alternative to an english muffin pizza
toast eng. muffin
in small pan with olive oil wilt spinach
slice tomatoes
layer spinach and tomatoes
salt and pepper
sprinkle with low fat mozzerella cheese
bake at 350 until cheese is melted
serve with sliced peppers
Yummy and healthy!!!


A snack Elvis would love!!
chocolate mini rice cakes
spread a LITTLE bit of natural peanut butter (my FAV!!)
top with sliced banana
yumyumyum!!!
